Meat production performance is the most important economic trait index of beef cattle. As a breed with excellent meat quality and rapid growth,Xinjiang Charolais beef cattle is widely raised in Ta’eh region of Xinjiang. In order to study the nutritional characteristics of Xinjiang Charolais beef, the nutritional composition of 25 Xinjiang Charolais beef raised in the same part of the 165 Regiment of the 9th Division of Xinjiang Corps was detected, and the nutritional data of Simmental and Angus beef were compared with those reported in the literature. The results showed that the moisture, protein, fat and ash contents of Xinjiang Charolais beef were not significantly different from those of Angus and Simmental crossbred beef. The total amino acid content of Charolais beef was 16.94-18.78 g/hg,lower than that of Angus beef (18.10-19.12 g/hg),and the total essential amino acid content was also lower than that of Angus beef. The content of saturated fatty acids was 55.46% to 62.44%,which was much higher than that of Angus beef (43.16% to 49.00%),and the content of monounsaturated fatty acids (23.69% to 37.61%) was close to that of Angus beef
(25.95% to 37.91%).Through the determination and evaluation of the main nutrients, minerals, amino acids and fatty acids of Xinjiang Charolais beef,it was concluded that the main nutrients and amino acids of Xinjiang Charolais beef were rich, which could be used for the selection of Xinjiang beef breeds and further development and utilization in the
crossbreeding of beef cattle. |
