      产肉性能是肉牛最为重要的经济性状指标,新疆夏洛莱肉牛作为一种肉质优良、生长迅速的品种,在新疆塔额地区得到了广泛的应用,为研究新疆夏洛莱的肉品营养特征,阐述新疆新疆夏洛莱肉牛的种质资源特性,分析夏洛莱肉牛品种培育进展情况,试验选取新疆兵团第九师白杨市165团的25 头新疆夏洛莱肉牛同一部位的牛肉进行营养成份检测,并与文献报道的西门塔尔、安格斯等品种的牛肉营养数据进行比较分析,结果显示:基础营养成份成份、蛋白质等没有显著差异;夏洛莱牛氨基酸总量(16.94-18.78 g/100g)均低于安格斯牛(18.10-19.12 g/100g),必需氨基酸总量夏洛莱牛也均低于安格斯牛;饱和脂肪酸含量(55.46-62.44 % )远高于安格斯牛的脂肪酸含量(43.16-49.00%),夏洛莱牛单不饱和脂肪酸含量(23.69-37.61 %)与安格斯牛单不饱和脂肪酸含量(25.95-37.91)接近;通过对新疆夏洛莱牛肉的主要营养成分、矿物质、氨基酸、脂肪酸等营养指标的测定与评价,认为新疆夏洛莱牛肉主要营养成分及氨基酸含量丰富。本研究结果为新疆夏洛莱牛肉牛品种开发利用,并作为新疆生产建设兵团牛肉生产的品种选择及杂交改良父本提供了可借鉴的科学依据。

      Meat production performance is the most important economic trait index of beef cattle, Xinjiang Charolais beef cattle, as a kind of breed with excellent meat quality and rapid growth, has been widely used in Ta''e area of Xinjiang , in order to study the meat nutritional characteristics of Xinjiang Charolais beef cattle, to elaborate the germplasm resource characteristics of Xinjiang Charolais beef cattle and to analyse the progress of Charolais beef cattle breed cultivation, the experiment selected 25 head of beef from the same part of the cattle in Xinjiang Corps Ninth Division Baiyang 165 Regiment for nutrient composition testing, and compared with the literature reported Simmental, Angus and other breeds of beef nutritional data, the results showed that: there is no significant difference in the basic nutrient composition, protein, etc; the total amino acid content of the Charolais cattle (16.94-18.78 g/100g) is lower than that of the Angus cattle (18.10-19.12 g/100g), the total amino acid content of the cattle is lower than that of the Angus cattle (18.10-19.12 g/100g). 19.12 g/100g), and the total amount of essential amino acids was lower in Xinjiang Charolais beef cattle than in Angus cattle; the content of saturated fatty acids (55.46-62.44 %) was much higher than that of Angus cattle (43.16-49.00 %), and the content of monounsaturated fatty acids in Xinjiang Charolais beef cattle (23.69-37.61 %) was close to that of Angus cattle (25.95-37.91 %). 37.91) were close to those of Angus cattle; through the determination and evaluation of the main nutrients, minerals, amino acids, fatty acids and other nutritional indexes of Xinjiang Charolais beef cattle, it was concluded that Xinjiang Charolais beef cattle was rich in main nutrients and amino acids.
