      肉牛屠宰加工是肉牛全产业链高质量发展的关键环节,其发展效益直接决定了肉牛产业链的稳定性与价值链的竞争优势。近年来,得益于消费转型升级及宏观政策推动,贵州省肉牛产业前端养殖规模逐渐扩大、养殖水平不断提升,而肉牛屠宰加工、市场推广及品牌建设等产业后端并未协同发展。本文立足贵州肉牛屠宰加工发展现状,深入剖析定点屠宰企业布局、屠宰加工设施设备、牛肉产品结构及屠宰加工标准体系等存在的问题,结合当前政策,提出优化定点屠宰加工企业布局、改善中小微定点屠宰企业屠宰加工条件、提高标准化屠宰加工生产线利用效率、完善肉牛屠宰加工标准体系等对策建议,以供决策参考。

      The slaughtering and processing of beef cattle is the key link of the high-quality development of the whole beef cattle industry chain, and its development benefits directly determine the stability of the beef cattle industry chain and the competitive advantage of the value chain. In recent years, thanks to the transformation and upgrading of consumption and the promotion of macro-policies, the front-end breeding scale of the beef cattle industry in Guizhou Province has gradually expanded and the breeding level has been continuously improved, while the back-end industries such as beef cattle slaughtering and processing, market promotion and brand building have not coordinated development. Based on the development status of beef cattle slaughtering and processing in Guizhou, this paper makes an in-depth analysis of the problems existing in the layout of designated slaughtering enterprises, slaughtering and processing facilities and equipment, beef product structure and slaughtering and processing standard system. Countermeasures and suggestions were put forward to optimize the layout of fixed-point slaughtering and processing enterprises, improve the slaughtering and processing conditions of small and micro fixed-point slaughtering enterprises, improve the utilization efficiency of standardized slaughtering and processing production lines, and improve the standard system of beef cattle slaughtering and processing for decision-making reference.
