      随着收入水平的提升,食品消费结构也会升级,牛肉是高端食品,预计未来牛肉消费需求会有较大提升,牛产业链的健康发展不仅能满足牛肉市场需求,而且还能促进农民增收。本文从“饲草-养殖-屠宰-销售”四个方面对山西省肉牛产业链现状和发展前景进行了分析,结果表明山西省天然饲草、粮改饲、酒糟醋糟非常规饲料数量不仅能维持目前山西省肉牛饲养量且还能扩充养殖量;规模化和集约化养殖取得成效,肉牛出栏率提升,牛肉产量连续8年增产;部分屠宰厂融入了牛产业链中,不仅参与前端养殖业且还参与后端的加工,受疫情和牛肉市场需求不旺影响,开工率不足;山西省人均牛肉消费量较低,估算约为全国人均消费量的20%,活体牛、冷链牛肉、真空常温牛肉三种销售方式并存。

      with the improvement of income level, the food consumption structure will also be upgraded. Beef is a high-end food. It is expected that the consumption demand of beef will be greatly improved in the future. The healthy development of beef industry chain can not only meet the demand of beef market, but also promote the increase of farmers'' income. This paper analyzes the current situation and development prospect of beef cattle industry chain in Shanxi Province from the four aspects of "forage --- breeding --- slaughtering --- sales". The results show that the quantity of natural forage, grain to feed, distiller''s grains and vinegar distiller''s grains unconventional feed in Shanxi Province can not only maintain the current beef cattle feeding quantity in Shanxi Province, but also expand the breeding quantity; Large scale and intensive breeding have achieved results, the slaughter rate of beef cattle has increased, and the beef output has increased for 8 consecutive years; Some slaughterhouses are integrated into the cattle industry chain and participate not only in the front-end breeding industry, but also in the back-end processing. Affected by the epidemic and the sluggish demand in the beef market, the operating rate is insufficient; The per capita beef consumption in Shanxi Province is relatively low, which is estimated to be about 20% of the national per capita consumption;Three sales methods of the living cattle, cold chain beef and vacuum normal temperature beef coexist.
