      为探究青贮藜麦(Chenopodium quinoa)对小尾寒羊肉品质、肌肉中微量元素含量和血液生化指标的影响。选取健康状况良好、体重接近的小尾寒羊60只,随机分5组,每组12只。对照组饲喂全贮玉米,试验处理组Ⅰ、Ⅱ、Ⅲ和Ⅳ分别饲喂含3%、6%、9%和12%青贮藜麦的全贮玉米,饲喂试验结束后,屠宰取背最长肌测定肌肉肉色、pH、嫩度、微量元素及血液生化指标。结果显示在饲粮中添加了3%、6%、9%青贮藜麦后,肌肉剪切力均下降,同时背最长肌熟肉率相比对照组均提高,试验Ⅳ组24h L*值显著高于对照组和其他试验组(P <0.05);Ⅳ组背最长肌中的Cu含量和Ⅲ组中Fe含量均显著高于其他各组(P<0.05),在肌肉中检测到4种矿物质元素的沉积量从大到小依次为Zn、Fe、Cu、Mn,添加了青贮藜麦小尾寒羊组织中Zn含量和Cu含量均不同程度升,且9%添加量提升效果最好(P <0.05),同时9%青贮藜麦能够显著提高肌肉Fe含量(P <0.05;不同青贮藜麦添加水平对小尾寒羊血液总胆红素(TBIL)、总蛋白(TP)、白蛋白(ALB)、球蛋白(GLB)和总胆固醇含量均有降低作用,甘油三脂(TG)含量相比对照组均降低,且试验Ⅳ组显著降低(P<0.05)。综上所述,小尾寒羊饲粮中添加适当比例青贮藜麦能够保持肉的滋味,香味,多汁性,外观和嫩度从而提升肉质品质,同时能够提升机体代谢水平,提供更多的能量,提高机体免疫力。
英文摘要:
      Objective To investigate the effects of Chenopodium quinoa silage on the quality, trace elements content in muscle and blood biochemical indices of small-tailed cold mutton. Sixty small tail han sheep with good health and similar body weight were randomly divided into 5 groups with 12 sheep in each group. The control group was fed with whole corn, and the experimental groups ⅰ, ⅱ, ⅲ and ⅳ were fed with whole corn containing 3%, 6%, 9% and 12% silage quinoa, respectively. After the feeding experiment, the longissimus dorsi muscle was slaughtered for meat color, pH, tenderness, trace elements and blood biochemical indices. The results showed that the muscle shear force was decreased and the cooked meat rate of longissimus dorsi muscle was increased in diets supplemented with 3%, 6% and 9% silage quinoa, and the 24h L* value of test group ⅳ was significantly higher than that of control group and other experimental groups (P < 0.05). The Cu content in longissimus dorsi muscle of group ⅳ and Fe content in group ⅲ were significantly higher than those in other groups (P < 0.05). The four mineral elements deposited in muscle were Found to be Zn, Fe, Cu and Mn in descending order. The Zn and Cu contents in small tail han sheep tissues of silage quinoa were increased in different degrees. Meanwhile, 9% silage quinoa could significantly increase muscle Fe content (P < 0.05; The contents of total bilirubin (TBIL), total protein (TP), albumin (ALB), globulin (GLB) and total cholesterol in blood of small tail Han sheep were decreased by different silage supplementation levels, and the triglyceride (TG) content was decreased compared with the control group, and significantly decreased in test group ⅳ (P < 0.05).【Conclusion】 In conclusion, adding appropriate proportion of silage quinoa to the diet of small-tailed Han sheep can maintain the taste, fragrance, juiciness, appearance and tenderness of meat, thus improving the meat quality, improving the metabolism level of the body, providing more energy and improving the body immunity.
