      早胜牛，俗称东牛，属于秦川牛的一个群体（类群），也是甘肃省唯一大型的优良黄牛品种。近年来，随着对牛肉需求的不断增加，政策也进行了不断改变，甘肃肉牛产业逐渐被重视，成为促进农牧民收入持续增长的重要产业，但因早胜牛品种资源保护措施不完备造成了种质不纯等问题。本文从早胜牛品种资源保护措施、肉品质选育改良、面临的问题以及未来展望等方面进行了论述。

英文摘要:

      Zaosheng cattle, commonly known as Dong cattle, belongs to the group of Qinchuan cattle, and is the only large-scale excellent cattle breed in Gansu province. In recent years, with the continuous improvement of the policy environment and the increasing demand for beef, the policy has been constantly changed, and the beef cattle industry in Gansu has been valued gradually and has become an important industry to promote the sustained growth of farmers and herdsmen's income. However, due to the incompleteness of the early protection of cattle breed resources, the germplasm is impure. This paper discussed the protection measures of Zaosheng cattle breed resources, the breeding and improvement of meat quality, the problems faced and the future prospect.
